Risks- 

If you flash a wrong file or patch to device your device maybe dead or ask for reprogram emmc so always choose file wisely and don't experiments with customer's mobile.

On starting use your own Mobiles for learning.

Safety- 

Always flash or unlock a device from a good customer as per situation.

Always ask for device's invoice bill.

If customer seems good or non suspected then ask for 2 confirm ID's with same addressed

And write Down Date of device unlocking

Both IMEI Numbers and ask customer for his/her current mobile number and sign in to both ID proofs.

This may help you alot if you mistakenly unlock a illegal device..
